Wild vegetables nurtured by the great nature of Hokkaido are first-class in aroma, texture, and flavor. They have a strong flavor that can only be experienced in a land blessed with clean air and melted snow.

Among them, gyoja garlic (Ainu onion) and butterbur sprouts, which herald the arrival of spring, are wild plants that have long been familiar to the Ainu people. You can enjoy the fragrance of spring in tempura or with miso.

Another must-try is black bracken, a rare wild vegetable unique to Hokkaido. It is characterized by its dark greenish-black color and firm texture.

Other wild vegetables such as cod roe, kogomi-gomi, udo, and royal ferns are also available. We offer a dish that is gentle on the body and soul while preserving nature's bounty.
